Boyos – Onion filling

8 to 10 lbs onions (2 lbs reg.–rest sweet onions)or(1/2 & 1/2)
Slice in processor
Saute in oil (canola)
Put in calander and let drain(couple of hours)
Save liquid for Broth
1 egg
2 egg whites
1 t salt (to taste)
1/4 to 1/2 C flour (to absorb)
1 lb cottage cheese (sml dry curds)
1/2 C romano cheese (grated)
30 – 35 BOYOS
